活章魚30~40克、乾紅辣椒粉適量、小黃瓜半條、白蘿蔔50克、芥末少許、豆腐乳及醬油適量 做法: 1.用鹽搓洗章魚,再朝盆裡摔幾次,此法可去除黏液並軟化肉質纖維。 2.洗淨後,取章魚腳,將吸盤與外膜切除。 3.處理好的章魚腳切薄片,放入冰水中冰鎮。 4.製作乾紅辣椒粉凍:日式辣椒粉少量,加半碗水、泡軟的明膠,煮成果凍;也可加點甜醋。 5.碗形的果凍倒扣盛盤,上置小黃瓜絲、冰鎮章魚片,裝飾排盤即可。
